Things you've missed!

Hello...!

Just wanted to briefly check in over here...just in case you hadn't reconnected with me on my new platform and was wondering where on earth i'd got to?  It's been a month since i've migrated now.

It seems that for some of you the transitions to my new feeds in your feed-readers hasn't been entirely smooth and hasn't happened automatically.  If that's you simply type my regular 'Including Cake' website URL on a new web page and you should come up with my new home ground, then paste this address directly into Feedly (or whatever you use). I mention Feedly as this is what I use and apparently for others that also use it, it still connected over here unless manually updated (or something like that...I'm trying to understand it all but it's still all a little over my head).

I also have good old email, RSS, all my social media...all that schabang! Whatever tickles your fancy really. Oh and if you don't follow me on Instagram already- hit me up there as I post lots of daily titbits and anything that inspires me. It's all good fun!

I'm off now....but here is a little preview of what you've been missing this last month.

To a new home we go!

WE'RE MOVING!


Ok peeps...I'm hoping this will be a smooth transition, i'm hoping there will be little loss of air time, I'm hoping you will still be able to connect to me seamlessly and not have to reconfigure RSS and all that techno stuff.....BUT I am no techy whizz and since I've never done this before I really have no clue what may happen over the next few hours (that's if i get iron out the last few bits and pieces ready in time form lift off tonight).

....HOLD TIGHT!


Over the last few months I've been painstakingly crafting a new blog on a new platform (goodbye Blogger it's been lovely knowing you!) I say painstaking as though it might not look much I am such a perfectionist and went through so many layout changes I can't even begin to count....

So, I'm not sure how much downtime (if any) there will be, so this is just to re-warn you what't around the corner.  Oh and when its all up and running please please let me know what you think, it;s still a work in progress and your comments are all so grwatfully received- in terms of layout, content and the sorts of things you want to see in the future.

A comfort zone is exactly that. A cocoon, a warm fuzzy blanket where nothing unexpected happens and everything goes to plan. There is nothing inherently wrong in enjoying these moments...in fact it could be argued you should enjoy and appreciate their simplicity and embrace them for what they are.

Also see beyond, the thoughts, feelings and fears that tickle away at the corners of you mind...
What if?

Life is a continual exploration both physical and mental, from the crazy moment we emerge from the warm bubble of our cocoon into the reality of the universe. We are born to live and grow....true life and true growth comes from pushing those boundaries, from taking a tentative step, through embracing and expanding our comfort zone and ultimately enriching our life and the lives of those within it.

Fruity Chia lollies

Do you remember this chia pudding?

Do you remember I was curious as to whether it could be turned into chia fruit lollies... Well I just couldn't resist giving it a go, so here we are! They are pretty good!



The recipe is pretty much identical to the pudding but to add a slight twist and colour pop I added some crushed raspberries to the mix to give a pretty colour contrast  :-)  I always use frozen fruits for things like this purely on a practical level as there is so much less colour bleed and crushing the 
raspberries is so easy when solid, however I do appreciate that frozen fruit has less chance of being seasonal and organic- unless of course you buy fresh and freeze them yourself- that would be best!

I doubled up the original recipe to make approx. 6 lollies. I tried to find some 
silicone lolly moulds but to no avail so my mould consisted of a hard plastic shell that needs running under hot water to loosen the lolly to eat. Not the easiest way to go about things and the tops did begin to go a little melty in places for the photoshoot...but no major drama!

I served up my lollies with some of my watermelon cooler....no way I was going to be dehydrating anytime soon ;-)




Recipe:  Fruity Chia lollies

Makes 6 lollies


Ingredients:


3 tbs white chia seeds (dark will work fine too but won’t look so pretty!)
2 bananas- mashed well
1 tbs maca powder (optional)
1 cup fresh pineapple
1/2 cup broken rasberry pieces- frozen works best
1/2 cup coconut water (or substitute regular filtered water)


Method:


Blend all ingredients together until smooth, stirring through the raspberry pieces last.

Spoon the mixture into lolly moulds and freeze.

Eat your beans!!!!

I wasn't planning on posting today...but it's 'National Eat Beans Day'!!

So, seriously how could I not resist!!

I don't have a new recipe lined up but I thought it would be the perfect opportunity for a round up as I haven't done one of those in a while.

So here we are (a small selection) in all their beanie glory. I always have numerous beans hand as I am a huge believer in soaking and cooking large batches of dried beans (so cost effective too) and then freezing them in portion sizes ready for a quick dessert, stew or salad!

So go cook up a big batch and let me know your favourite beanie recipes :-)

Some savouries....

Homemade smoky baked beans

Black bean beet burger
Bean and pea dip (or sandwich filler)


Roasted chickpeas...they count as beans!!
